Diamine oxidase (DAO) is an enzyme responsible for the breakdown of histamine in the body. It cleaves histamine inactivating metabolites to regulate its concentration in the body. Low DAO activity can lead to a buildup of histamine, which is known as histamine intolerance. Histamine intolerance is a disorder in which the body cannot adequately break down histamine, which can lead to various symptoms such as headaches, redness of the skin, gastrointestinal discomfort, and allergy-like reactions.
